Double chocolate banana bread

Deeply chocolatey banana bread made with cocoa, real chocolate and very ripe bananas — moist for days, if it lasts that long.

Ingredients

  • 3 very ripe bananas
  • 113 g unsalted butter, melted
  • 100 g sugar
  • 100 g brown sugar
  • 100 g semisweet chocolate, melted
  • 180 g all-purpose flour
  • 2 eggs
  • 1 tsp vanilla
  • 5 g baking soda (or 5 g baking powder)
  • 60 g cocoa powder
  • Pinch of salt
  • Chocolate chips, to decorate

Instructions

  1. Preheat the oven to 175°C (350°F) and line a loaf pan.
  2. Mash the bananas until smooth, then whisk in the melted butter, both sugars, the eggs and vanilla.
  3. Stir in the melted chocolate.
  4. Fold in the flour, cocoa, baking soda and salt, mixing just until no dry streaks remain.
  5. Pour into the pan and scatter chocolate chips on top.
  6. Bake 50–60 minutes, until a skewer comes out with moist crumbs but no wet batter. Cool in the pan 15 minutes before slicing.
