Ingredients
- 10 tbsp (140g) unsalted butter, melted
- 1 tbsp (13g) vegetable oil
- 1 cup (200g) granulated sugar
- 1/4 cup (50g) brown sugar, packed
- 2 eggs + 1 egg yolk, room temp
- 1 tsp vanilla extract
- 2/3 cup (60g) unsweetened cocoa powder
- 1/2 tsp salt
- 1 tbsp cornstarch
- 2/3 cup (80g) all-purpose flour, spooned & leveled or weighed (don't pack it in)
- 3/4 cup chocolate chips
- Nutella (or chocolate ganache or frosting) (for the topping)
- Rainbow nonpareils (dot sprinkles) (for the topping)
Instructions
- Preheat oven to 325°F (163°C) and grease a 10-inch cast iron skillet.
- In a large bowl, whisk melted butter, oil, granulated sugar, and brown sugar until smooth.
- Add eggs and vanilla, mix until well combined.
- Stir in cocoa powder, cornstarch, and salt.
- Then, gently fold in the flour until just combined (don't over mix).
- Fold in chocolate chips.
- Spread batter into the prepared skillet.
- Bake for 22-28 minutes until a toothpick inserted near the center comes out with a few moist crumbs (not wet batter).
- Let it cool ~1 hour.
- Spread nutella (or chocolate ganache/frosting) over the cooled brownie skillet and top with rainbow nonpareils all over.
