Ingredients
- 3 cups very soft pitted dates ( medjool dates work best)
- 2 tbsp butter
- 1 1/2 cup mixed roasted nuts
- 1/3 cup sesame seeds
- 1/3 cup desiccated coconut
- 1 tsp green cardamom powder
Instructions
- In a pan over medium-low heat, melt the butter. Add the chopped dates and cook for 2–3 minutes until soft. Stir in the roasted nuts, sesame seeds, coconut, and cardamom powder. Mix until well combined but still slightly textured.
- Divide into 2-3 portions. Roll tightly in parchment paper into log shapes. Refrigerate at least 1 hour or until firm.
- Roll in coconut flakes, sesame seeds or crushed pistachios for a beautiful finish. Cut into rounds and enjoy.
Tip: Taste the sauce before assembling and adjust the salt then, not after.
