Ingredients

  • 1 1/2 cup crushed nilla wafers(150g) (for the crust)
  • 1/3 cup melted butter(76g) (for the crust)
  • 1 tsp cinnamon (for the crust)
  • 1 box instant banana pudding(96g)(3 (for the topping)
  • 2 cups of milk (480g) whipped (for the topping)
  • 1 cup heavy whipping cream(240g) (for the topping)
  • 2 tbsp powdered sugar (16g)( add to taste) mix your cold milk & pudding (for the topping)
  • 1 cup granulated sugar(200g) (for the filling)
  • 1 tsp vanilla(5g) (for the filling)
  • 1/2 tsp cinnamon (for the filling)
  • 3 eggs( room temp) (for the filling)
  • 1/2 cup plain greek yogurt ( or sour cream)(120g) (for the filling)
  • 1/2 cup mashed banana(120g)(1 banana) & (for the filling)
  • 2 bananas for the middle layer crushed nilla wafers for the middle layer (50g) (for the filling)
  • 55 to 65 minutes, or until the center is just set and slightly jiggly( like jello) (for the filling)

Instructions

  1. Mix and press into pan, set aside until ready to use
  2. Mix until it becomes thick, let sit for 5 minutes before adding whipped topping
  3. For the whipped topping whip together cream and sugar until a stiff peak forms
  4. Fold together gently cheesecake filling: 3 (8oz) packages of softened cream cheese(680g)
  5. Beat the softened cream cheese and sugar until smooth, then mix in the vanilla extract
  6. Add the eggs one at a time, beating just until combined
  7. Blend in the sour cream and mashed bananas until the mixture is smooth
  8. Pour half of the cheesecake filling in the prepared crust pan & then add the sliced banana and crushed wafers, then add the rest of the cheesecake
  9. Pour the cheesecake mixture over the prepared crust and smooth the top
  10. On the rack below, set a baking sheet and carefully pour in boiling water to create steam (no water bath needed)
  11. Bake at 325•f for about
  12. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour
  13. Then remove it and let it come to room temp outside the oven, chill in the refrigerator for at least 4 hours or overnight before serving
