Coffee Layer Cake

Ingredients
- 200 g all-purpose flour (1 2/3 cup)
- 200 g granulated sugar (1 cup)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp coffee powder
- 1 tsp salt
- 1 large egg
- 115 g melted butter (1/2 cup)
- 1 tsp vanilla
- 135 g (1/2 cup + 1 tbsp) heavy cream
- 120 ml milk (1/2 cup)
Instructions
- Preheat your oven to 300F (150C).
- In a bowl, sift and whisk the dry ingredients together.
- In a separate bowl whisk together all the wet ingredients until well combined.
- Add the dry ingredients to the wet ingredients and mix gently until no streaks of flour remain. Do not overmix the batter.
- Grease 2 pcs of 6" round pan with a little oil and line the bottom with baking paper. Divide the batter into the pans (approximately 340g-350g of batter per pan)
- Tap the pans on the counter to release air bubbles. Then bake for 40-45 mins or until a toothpick inserted comes out clean. Cool completely before frosting.
- To make the ganache, heat the cream in the microwave or on the stove until it just starts to bubble. then pour this over the chocolate. Mix thoroughly until all chocolate is dissolved. Cover and refrigerate. Once cold, beat the ganache using a whisk or a hand mixer until it doubles in volume and becomes lighter in color.
- Assemble the cake and enjoy
Tip: Room-temperature eggs blend in far more smoothly; five minutes in warm water does the trick.
