Classic chocolate chip cookies

Bold, saucy classic chocolate chip cookies that disappears from the pan before it reaches the table.

Ingredients

  • 1/2 cup (113g) unsalted butter, melted (let it cool slightly)
  • 1/2 cup (100g) light brown sugar
  • 1/4 cup + 1 tbsp (65g) granulated sugar
  • 1 egg, room temp
  • 1 tbsp vanilla bean paste
  • 1 1/4 cup (156g) all purpose flour
  • 1 tsp (2g) espresso powder , optional
  • 1/2 tsp (3g) baking soda
  • Pinch of flakey salt
  • 1 1/3 cup (230g) semi sweet chocolate chips (plus more for topping, optional)

Instructions

  1. Preheat oven to 350 F and line a baking sheet with parchment paper.
  2. In a bowl mix flour, baking soda espresso powder and salt, set aside.
  3. In a separate bowl add melted butter. Mix in brown and granulated sugar. Whisk for 1-2 minutes until it turns into paste. Crack in the egg and vanilla mix until combine.
  4. Combine dry ingredients into the wet batter and gently fold in until just combined. Add chocolate chips and mix with spatula. Do not over mix the batter.
  5. Scoop out 9 cookies onto the parchment paper. Freeze for 30 min. Place not more than 4 cookies on a 15*10 baking tray. As they spread while baking. Bake for 11 - 12 minutes.
  6. They should come out golden and crispy from the edges and gooey from the center. Sprinkle with sea salt and alow them to cool completely before serving.
