Ingredients

  • 110 g melted butter (1/2 cup)
  • 100 g granulated white sugar (1/2 cup)
  • 65 g light brown sugar (1/3 cup)
  • 1 large egg
  • 2 tsp vanilla extract
  • 150 g all-purpose flour (11/4 cups)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 100g dark chocolate chips (1/2 cup)
  • 50g milk chocolate chips (1/4 cup)

Instructions

  1. In a mixing bowl, whisk together melted butter and the sugars until it resembles wet sand.
  2. Add the egg and vanilla and whisk until well combined.
  3. Sift in the flour, baking soda, and salt. Fold gently until a few streaks of flour remains in the dough. Then fold in the chocolate chips.
  4. Using a large ice cream scoop, scoop the dough (makes about 9-10 pcs) and refrigerate for atleast 1 hr (3 hrs to overnight is best!)
  5. To bake, preheat the oven to 350F or 180C. Roll out each cookie dough in your hands and place atleast 2 inches apart on a parchment lined baking tray.
  6. Bake for 9-12 mins or just until the sides of the cookies have set . Underbake your cookies if you want them chewy.
  7. Let the cookies cool in the pan for 10-15mins.
Tip: Line the pan with parchment overhanging the sides so you can lift the whole slab out.
