Ingredients
- 110 g melted butter (1/2 cup)
- 100 g granulated white sugar (1/2 cup)
- 65 g light brown sugar (1/3 cup)
- 1 large egg
- 2 tsp vanilla extract
- 150 g all-purpose flour (11/4 cups)
- 1/2 tsp baking soda
- 1/2 tsp salt
- 100g dark chocolate chips (1/2 cup)
- 50g milk chocolate chips (1/4 cup)
Instructions
- In a mixing bowl, whisk together melted butter and the sugars until it resembles wet sand.
- Add the egg and vanilla and whisk until well combined.
- Sift in the flour, baking soda, and salt. Fold gently until a few streaks of flour remains in the dough. Then fold in the chocolate chips.
- Using a large ice cream scoop, scoop the dough (makes about 9-10 pcs) and refrigerate for atleast 1 hr (3 hrs to overnight is best!)
- To bake, preheat the oven to 350F or 180C. Roll out each cookie dough in your hands and place atleast 2 inches apart on a parchment lined baking tray.
- Bake for 9-12 mins or just until the sides of the cookies have set . Underbake your cookies if you want them chewy.
- Let the cookies cool in the pan for 10-15mins.
Tip: Line the pan with parchment overhanging the sides so you can lift the whole slab out.
