Cinnamon Swirl Apple Cake

Ingredients
- 2 large eggs
- 150 g granulated sugar (3/4 cup)
- 100 g light brown sugar (1/2 cup)
- 115 g melted butter (1/2 cup)
- 120 g plain yogurt (1/2 cup)
- 120 ml buttermilk (1/2 cup)
- 1 tsp vanilla
- 250 g all-purpose flour (2 cups)
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2-3 pcs (250 g) medium apples, diced
- 1 tsp brown sugar + 1 tsp cinnamon (for the apples)
- 2 tsp cinnamon + 2 tbsp brown sugar (for the swirl)
- 1-2 tbsp milk
Instructions
- In a bowl combine all the wet ingredients for the cake plus the sugars: eggs,melted butter, yogurt, buttermilk, vanilla, and light brown sugar . Whisk until well combined.
- Sift together the dry ingredients then add to the wet ingredients: all purpose flour, baking powder, baking soda, salt. Gently mix until no streaks of flour remain.
- Fold in the apple mix.
- Transfer the batter to an 8x8 inch baking pan lined with baking paper or parchment.
- Put dollops of the cinnamon mixture on top of the cake and swirl it using a toothpick or a chopstick.
- Bake in a preheated oven at 350F (180C) for 35-45 mins or until a toothpick inserted comes out clean.
- Once baked, cool the cake in the pan for 10-15 mins, transfer to a cooling rack to cool completely.
- Top with the glaze and enjoy
Tip: Room-temperature eggs blend in far more smoothly; five minutes in warm water does the trick.
