Cinnamon Swirl Apple Cake

Ingredients

  • 2 large eggs
  • 150 g granulated sugar (3/4 cup)
  • 100 g light brown sugar (1/2 cup)
  • 115 g melted butter (1/2 cup)
  • 120 g plain yogurt (1/2 cup)
  • 120 ml buttermilk (1/2 cup)
  • 1 tsp vanilla
  • 250 g all-purpose flour (2 cups)
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2-3 pcs (250 g) medium apples, diced
  • 1 tsp brown sugar + 1 tsp cinnamon (for the apples)
  • 2 tsp cinnamon + 2 tbsp brown sugar (for the swirl)
  • 1-2 tbsp milk

Instructions

  1. In a bowl combine all the wet ingredients for the cake plus the sugars: eggs,melted butter, yogurt, buttermilk, vanilla, and light brown sugar . Whisk until well combined.
  2. Sift together the dry ingredients then add to the wet ingredients: all purpose flour, baking powder, baking soda, salt. Gently mix until no streaks of flour remain.
  3. Fold in the apple mix.
  4. Transfer the batter to an 8x8 inch baking pan lined with baking paper or parchment.
  5. Put dollops of the cinnamon mixture on top of the cake and swirl it using a toothpick or a chopstick.
  6. Bake in a preheated oven at 350F (180C) for 35-45 mins or until a toothpick inserted comes out clean.
  7. Once baked, cool the cake in the pan for 10-15 mins, transfer to a cooling rack to cool completely.
  8. Top with the glaze and enjoy
Tip: Room-temperature eggs blend in far more smoothly; five minutes in warm water does the trick.
