Ingredients
- 1 cup salted butter, softened (227 g)
- 3/4 cup brown sugar (165 g)
- 1/4 cup granulated sugar (50 g)
- 1 large egg (50 g)
- 1 tsp vanilla paste (5 g)
- 23/4 cups all-purpose flour (330g)
- 1/2 tsp cream of tartar (1
- 3/4 tsp baking soda (4 g)
- 1/2 tsp salt (3 g)
- 11/2 tsp ground cinnamon (4 g) cinnamon roll
- 3 tbsp unsalted butter (for the filling)
- 1/4 cup brown sugar (55 g) (for the filling)
- 1 tbsp ground cinnamon (8 g) (for the filling)
- 1 tbsp all-purpose flour (8 g) cinnamon sugar coating (for the filling)
- 1/4 cup granulated sugar (50 g) (for the filling)
- 1 tsp ground cinnamon (2 (for the filling)
- 2 oz cream cheese, softened (56 g) (for the filling)
- 1/2 cup powdered sugar (60 g) 1– (for the filling)
- 2 tbsp milk (15– (for the filling)

Instructions
- Melted (42 g)
- 5 g) cream cheese glaze (optional)
- Make the cinnamon roll filling by mixing together the melted butter, brown sugar, cinnamon, and flour until a thick paste forms
- Spread onto a small piece of parchment paper and freeze for 20 minutes until firm
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy
- Mix in the egg and vanilla paste until combined
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and cinnamon
- Add the dry ingredients to the wet ingredients and mix just until combined
- Remove the cinnamon filling from the freezer and chop into small pieces
- Gently fold the pieces into the cookie dough
- Mix together the granulated sugar and cinnamon for the coating
- Roll in the cinnamon sugar coating
- Bake for 12–14 minutes, or until the edges are set and the centers still look slightly underbaked
- Let cool for 10 minutes on baking sheet so the cookies can set for the glaze, whisk together the cream cheese, powdered sugar, milk ( or heavy cream ) , and vanilla until smooth
