Cinnamon Peach Cake

Ingredients
- 2 large eggs
- 150 g granulated sugar (3/4 cup)
- 100 g light brown sugar (1/2 cup)
- 115 g melted butter (1/2 cup)
- 120 g plain yogurt (1/2 cup)
- 120 ml buttermilk (1/2 cup)
- 1 tsp vanilla
- 250 g all-purpose flour (2 cups)
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 3 pcs diced peaches
- 1 tsp cinnamon (for the batter)
- 2 tsp cinnamon + 2 tbsp brown sugar (for the swirl)
- 1 tbsp milk
Instructions
- In a bowl, whisk the sugar and eggs, then add the rest of the wet ingredients: melted butter, yogurt, buttermilk, and vanilla . Whisk until well combined.
- Add the dry ingredients: all purpose flour, baking powder, baking soda, and salt. Gently mix until no streaks of flour remain.
- Transfer the batter to an 8x8 inch baking pan lined with baking paper or parchment.
- Put dollops of the cinnamon mixture on top of the cake and swirl it using a toothpick or a chopstick.
- Bake in a preheated oven at 350F (180C) for 35-45 mins or until a toothpick inserted comes out clean.
- Once baked, cool the cake in the pan for 10-15 mins, transfer to a cooling rack to cool completely.
- Drizzle with the icing and enjoy

Tip: Underbaking slightly is the secret — the centre firms up as it cools.
