Cinnamon Coffee Cake

Ingredients

  • 2 large eggs
  • 150 g granulated sugar (3/4 cup)
  • 100 g light brown sugar (1/2 cup)
  • 115 g melted butter (1/2 cup)
  • 120 ml buttermilk (1/2 cup)
  • 1 tsp vanilla
  • 250 g all-purpose flour (2 cups)
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1/3 cup white sugar + 2 tsp cinnamon (for the swirl)
  • 2 tbsp (30 g) brown sugar
  • 1/2 tsp cinnamon (for the glaze)
  • 1-2 tbsp milk
  • 120 g icing sugar (for the glaze)

Instructions

  1. In a bowl combine all the wet ingredients plus the sugars: eggs,melted butter, buttermilk, vanilla, granulated sugar, brown sugar . Whisk until well combined.
  2. Sift together the dry ingredients then add to the wet ingredients: all purpose flour, cinnamon, baking powder, baking soda, salt. Gently mix until no streaks of flour remain.
  3. Transfer the batter to an 8x8 inch baking pan lined with baking paper or parchment.
  4. Top with the cinnamon sugar and use a chopstick or toothpick to swirl in the batter,
  5. For the streusel, simply mix the streusel ingredients together until crumbly. If too wet, add 1 tablespoon of flour at a time.
  6. Bake in a preheated oven at 350F (180C) for 40-45 mins or until a toothpick inserted comes out clean. At about 30 mins , loosely cover with foil to avoid crumble from browning too much.
  7. Once baked, cool the coffee cake in the pan for 10-15 mins, transfer to a cooling rack to cool completely.
  8. Top with the glaze and enjoy
Tip: Room-temperature eggs blend in far more smoothly; five minutes in warm water does the trick.
