Ingredients
- 1 cup (226g) shortening , melted and cooled slightly
- 1 tbsp milk
- 1 cup (200g) light brown sugar
- 1/3 cup (67g) granulated sugar
- 2 eggs, room temp
- 2 1/4 cups (280g) all purpose flour
- 1 tsp corn starch
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp espresso powder (optional )
- 1 tbsp vanilla bean paste
- 1 1/2 cups (255g) semi sweet chopped chocolate or chocolate chip chips
- Chosen Foods Avocado Oil Spray (for greasing the pan)
Instructions
- Preheat the oven to 350 F. Grease 9*9 inch pan . Spray with chosen foods avocado oil and line the bottom with parchment paper.
- Make wet batter: In a large bowl, whisk together the melted shortening, milk, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla bean paste, whisking until fully combined.
- Combine the dry ingredients: In a separate bowl, whisk together the flour, cornstarch, baking soda, salt, and espresso powder.
- Add this mixture to the wet ingredients and stir until just combined avoid overmixing.
- Fold in the chopped chocolate or chocolate chips, reserving a small handful for topping if desired.
- Spread the dough evenly into the greased pan.
- Sprinkle the reserved chocolate on top.
- Bake for 30-35 minutes, until the edges are golden and the center is set but still soft.�
- Cool in the pan for at least 20–30 minutes to set.
- Slice into bars and enjoy!
Tip: Leftovers keep 3 days in the fridge and reheat best in a skillet, not the microwave.
