Ingredients

  • 1 cup (226g) shortening , melted and cooled slightly
  • 1 tbsp milk
  • 1 cup (200g) light brown sugar
  • 1/3 cup (67g) granulated sugar
  • 2 eggs, room temp
  • 2 1/4 cups (280g) all purpose flour
  • 1 tsp corn starch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp espresso powder (optional )
  • 1 tbsp vanilla bean paste
  • 1 1/2 cups (255g) semi sweet chopped chocolate or chocolate chip chips
  • Chosen Foods Avocado Oil Spray (for greasing the pan)

Instructions

  1. Preheat the oven to 350 F. Grease 9*9 inch pan . Spray with chosen foods avocado oil and line the bottom with parchment paper.
  2. Make wet batter: In a large bowl, whisk together the melted shortening, milk, brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla bean paste, whisking until fully combined.
  4. Combine the dry ingredients: In a separate bowl, whisk together the flour, cornstarch, baking soda, salt, and espresso powder.
  5. Add this mixture to the wet ingredients and stir until just combined avoid overmixing.
  6. Fold in the chopped chocolate or chocolate chips, reserving a small handful for topping if desired.
  7. Spread the dough evenly into the greased pan.
  8. Sprinkle the reserved chocolate on top.
  9. Bake for 30-35 minutes, until the edges are golden and the center is set but still soft.�
  10. Cool in the pan for at least 20–30 minutes to set.
  11. Slice into bars and enjoy!
Tip: Leftovers keep 3 days in the fridge and reheat best in a skillet, not the microwave.
