Ingredients

- 13/4 cups all-purpose flour (210g)
- 1 teaspoon baking powder (4g)
- 1/2 teaspoon baking soda (3g)
- 1/2 teaspoon salt (3g)
- 1 tablespoon cinnamon (8g)
- 1/2 teaspoon nutmeg
- 1/2 cup brown sugar (100g)
- 1/4 cup granulated sugar (50g)
- 1/2 cup salted butter, browned (113g)
- 1 egg, rt (50g)
- 2 medium ripe bananas, mashed (220g)
- 1/4 cup plain greek yogurt (60g)
- 1 tbsp vanilla paste (13g)
- 3/4 cup finely shredded carrots (75g) instructions: preheat your oven to 400f and line your muffin tin in a medium bowl
- 350 for 35-30 mins, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs
- 8 oz cream cheese, softened (226g) (for the frosting)
- 4 tbsp salted butter, softened (56g) (for the frosting)
- 11/4 cups powdered sugar (150g) 1– (for the frosting)
- 2 tablespoons maple syrup (15– (for the frosting)
- 30g) (for the frosting)
- 1 tbsp cinnamon (8g) (for the frosting)
- 1 tsp vanilla bean paste (5g) instructions (for the frosting)
Instructions
- Whisk together the flour, baking powder, baking soda, salt, nutmeg and cinnamon until evenly combined
- In a separate bowl whisk the banana & brown butter until combined, then mix in the sugars until smooth
- Add the egg, greek yogurt( or sour cream ) and vanilla & mix until the batter is smooth
- Add the dry ingredients into the wet ingredients and gently fold together until mostly combined with a few streaks of flour remaining
- Add the finely shredded carrots and fold just until everything is incorporated
- Avoid overmixing so the muffins stay soft and fluffy :) pour the batter into the prepared muffin pan and smooth the top
- Bake for about 5 minutes then reduce the temp to
- Let the muffins cool in the pan for about 15 minutes, then transfer to a rack to cool completely before frosting cinnamon maple frosting
- Add the softened cream cheese and butter to a bowl and beat together until smooth and fluffy
- Add the powdered sugar and mix until fully incorporated
- Mix in the maple syrup, cinnamon, and vanilla bean paste and continue beating until the frosting is smooth and creamy
- If the frosting feels too thick, add a little more maple syrup
- If it feels too soft, add a bit more powdered sugar
- Spread over the cooled muffins
