Burnt Basque Cheesecake

Ingredients

  • 3 large eggs
  • 2 tsp vanilla
  • 2 tbsp flour
  • 1 tsp salt

Instructions

  1. Prepare a 7" springform pan and line the bottom and the sides with 2 layers of parchment paper.
  2. In a bowl, mix together the cream cheese and the sugar using a wooden spoon/ spatula. Once mixed, shift to a whisk and whisk until soft. If you're using a mixer, skip this step and use the mixer on medium speed until well incorporated.
  3. Add the eggs one at a time, mixing well before adding the next one. Then mix in the vanilla.
  4. In a small separate bowl, mix the flour, salt, and heavy cream. Pour this over to the cream cheese mixture then mix well.
  5. Strain the cheesecake batter while transferring to the pan to avoid lumps in the cheesecake.
  6. Bake for 35 to 40 mins or until the top is a bit burnt but the center remains jiggly when you give the pan a little shake.
  7. Once baked, let cool for 30 mins then transfer to the fridge to chill overnight for best results

Tip: Let it cool fully before slicing; the texture sets in the last twenty minutes.
