Ingredients
- 1/2 cup salted butter
- 3/4 cup granulated sugar (150g)
- 2/3 cup cocoa powder (65g)
- 1/4 tsp salt (1g)
- 1/2 tsp vanilla extract (2g)
- 1 large egg (50g)
- 1 cup all-purpose flour (130g) & chocolate chips for the cookie
- 3/4 cup salted butter, softened (170g) (for the dough)
- 3/4 cup packed brown sugar (150g) (for the dough)
- 1/4 cup granulated sugar (50g) (for the dough)
- 1 large egg (50g) (for the dough)
- 1 tsp vanilla (5g) (for the dough)
- 2 cups all-purpose flour (240g) (for the dough)
- 1 tbsp cornstarch (8g) (for the dough)
- 1/2 tsp baking soda (3g) (for the dough)
- 1/4 tsp salt (1 (for the dough)
- 8 portions (for the dough)
Instructions

- Add vanilla and egg and mix until glossy
- Stir in flour until a thick dough forms, then fold in chocolate chips
- For the cookie dough, cream the butter and sugars together until smooth and slightly fluffy
- Mix in the egg and vanilla until fully combined
- In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt
- Fold the dry ingredients into the wet just until combined
- Take each portion and split it in half, flatten one piece, place a brownie ball in the center, then cover with the second piece of dough and seal the edges
- Shape into tall mounds and flatten the tops slightly
- Bake at 375°f for 11–14 minutes, until the edges are set and the centers are still soft
- Let cool on the pan to set
