Ingredients

  • 2 large eggs
  • 150 g granulated sugar (3/4 cup)
  • 100 g light brown sugar (1/2 cup)
  • 115 g melted butter (1/2 cup)
  • 120 g plain yogurt (1/2 cup)
  • 120 ml buttermilk (1/2 cup)
  • 1 tsp vanilla
  • 250 g all-purpose flour (2 cups)
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3 pcs diced peaches
  • 1 tsp cinnamon (for the batter)
  • 2 tsp cinnamon + 2 tbsp brown sugar (for the swirl)
  • 1 tbsp milk

Instructions

  1. In a bowl, whisk the sugar and eggs, then add the rest of the wet ingredients: melted butter, yogurt, buttermilk, and vanilla . Whisk until well combined.
  2. Add the dry ingredients: all purpose flour, baking powder, baking soda, and salt. Gently mix until no streaks of flour remain.
  3. Transfer the batter to an 8x8 inch baking pan lined with baking paper or parchment.
  4. Put dollops of the cinnamon mixture on top of the cake and swirl it using a toothpick or a chopstick.
  5. Bake in a preheated oven at 350F (180C) for 35-45 mins or until a toothpick inserted comes out clean.
  6. Once baked, cool the cake in the pan for 10-15 mins, transfer to a cooling rack to cool completely.
  7. Drizzle with the icing and enjoy
