Brown Butter M&M Blondies

Ingredients
- 3/4 cup (170g) unsalted butter (brown it)
- 3/4 cup (150g) brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 2 eggs + 1 egg yolk, room temp
- 2 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp cornstarch
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup m&ms (+ more for topping)
- 1/3 cup chocolate chips/chopped chocolate
Instructions
- In a saucepan, brown the butter over medium heat. Stir constantly until it foams then turns a golden brown color.
- It should have a nutty aroma with little brown bits.
- Transfer to a heat safe bowl (make sure to get all those little brown bits in there!)
- Cool for about 10 minutes.
- Preheat oven to 325°F and line/grease an 8x8 pan.
- Mix the slightly cooled brown butter and both sugars together.
- Beat in the eggs, egg yolk, and vanilla until smooth.
- Whisk together the flour, cornstarch, baking powder, and salt, then gently fold into the wet ingredients until just combined.
- Fold in the m&ms and chocolate chips. Do not over mix.
- Spread the batter evenly in the pan and sprinkle m&ms on top.
- Bake 30-35 minutes or until a toothpick inserted into the center comes out clean/with a few moist crumbs.
- Top with a few more m&ms if some sank.
- Let it cool for cleaner cuts.
