  • 1/2 cup (113g) salted butter, browned
  • 1/2 cup (100g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs (100g)
  • 1 tbsp vanilla extract (13g)
  • 1/4 cup (60g) buttermilk
  • 11/2 cups (180g) cake flour
  • 1 tsp baking powder (4g)
  • 1/2 tsp baking soda (2g)
  • 3/4 tsp salt (4g) mini chocolate chips ( measure with your heart ) for the crumb
  • 1 cup (120g) all-purpose flour (for the topping)
  • 1/3 cup (65g) brown sugar (for the topping)
  • 3 tbsp (38g) granulated sugar (for the topping)
  • 1/2 tsp cinnamon(optional) (for the topping)
  • 1/2 tsp salt (for the topping)
  • 5 tbsp (70g) butter (half browned, half softened) instructions: preheat oven to 375°F (for the topping)

Instructions

  1. Line a loaf pan with parchment paper
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt
  3. In another bowl, whisk together the brown butter, brown sugar, and granulated sugar until smooth
  4. Add the eggs and vanilla, mixing until thick and glossy
  5. Mix in the buttermilk until fully combined
  6. Add the dry ingredients and fold gently until just combined
  7. Fold in the chocolate chips
  8. Pour the batter into the pan and smooth the top
  9. Let it rest for 8–10 minutes so the surface slightly sets
  10. For the crumb, brown half the butter to cool it down add the rest of the softened butter in a separate bowl, mix flour, brown sugar, granulated sugar, cinnamon, and salt
  11. Add the butter and pinch together until you get large, chunky clumps
  12. Sprinkle crumble evenly over loaf bake at 375°f for 10 minutes, then reduce to 350°f and bake for another 45–55 minutes, or until set in the center
  13. Let cool before slicing
