- 1/2 cup (113g) salted butter, browned
- 1/2 cup (100g) brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs (100g)
- 1 tbsp vanilla extract (13g)
- 1/4 cup (60g) buttermilk
- 11/2 cups (180g) cake flour
- 1 tsp baking powder (4g)
- 1/2 tsp baking soda (2g)
- 3/4 tsp salt (4g) mini chocolate chips ( measure with your heart ) for the crumb
- 1 cup (120g) all-purpose flour (for the topping)
- 1/3 cup (65g) brown sugar (for the topping)
- 3 tbsp (38g) granulated sugar (for the topping)
- 1/2 tsp cinnamon(optional) (for the topping)
- 1/2 tsp salt (for the topping)
- 5 tbsp (70g) butter (half browned, half softened) instructions: preheat oven to 375°F (for the topping)
Instructions
- Line a loaf pan with parchment paper
- In a bowl, whisk together the flour, baking powder, baking soda, and salt
- In another bowl, whisk together the brown butter, brown sugar, and granulated sugar until smooth
- Add the eggs and vanilla, mixing until thick and glossy
- Mix in the buttermilk until fully combined
- Add the dry ingredients and fold gently until just combined
- Fold in the chocolate chips
- Pour the batter into the pan and smooth the top
- Let it rest for 8–10 minutes so the surface slightly sets
- For the crumb, brown half the butter to cool it down add the rest of the softened butter in a separate bowl, mix flour, brown sugar, granulated sugar, cinnamon, and salt
- Add the butter and pinch together until you get large, chunky clumps
- Sprinkle crumble evenly over loaf bake at 375°f for 10 minutes, then reduce to 350°f and bake for another 45–55 minutes, or until set in the center
- Let cool before slicing
