Brown butter chocolate chip cookies

Ingredients

  • 1/2 cup (115g) unsalted butter
  • 1/3 cup (69g) granulated sugar
  • 1/2 cup (79g) light brown sugar
  • 1 tbsp (15g) vanilla bean paste
  • 1 large egg room temperature
  • 1 1/4 cup (160g) all purpose flour
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1 1/2 cup (225g) semi sweet chocolate chips

Instructions

  1. Preheat oven to 350 F (180 C). Line a baking sheet with parchment paper.
  2. In a pan add butter , melted over medium heat. Cook for 5-7 minutes until the butter turns light golden brown and develops a nutty aroma. Remove from heat and let cool completely.
  3. In a bowl add all purpose flour, baking soda and salt. Mix well and set aside.
  4. In a separate bowl add browned butter along with granulated sugar and brown sugar. Mix well. Add vanilla bean paste and egg mix for 2-3 minutes until the mixture turns pale in color and a smooth paste forms.
  5. Fold the dry ingredients in the wet batter until just combined, do not over mix. Add chocolate chips and mix until just combined.
  6. Scoop 4 cookies onto the prepared baking sheet leaving some space in between each cookie. Top with additional chocolate chips if desired.
  7. Bake the cookies for 12 min or until golden crisps at the edges, gooey from the center.
  8. Allow to cool completely before serving and enjoy
Tip: Let the meat rest a few minutes before slicing; it keeps the juices where they belong.
