Biscoff Cinnamon Rolls

Ingredients

  • 3/4 cup warm milk (180 g)
  • 3 tsp yeast (9 g)
  • 1/4 cup sugar (50 g)
  • 1 egg + 1 egg yolk, room temp
  • 1/4 cup melted butter (57 g)
  • 3 cups flour (360 g), plus more as needed
  • 1 tsp salt (5 g)
  • 1/4 cup melted butter (57 g) (for the filling)
  • 2 heaping tbsp biscoff cookie butter (60 g) (for the filling)
  • 3/4 cup brown sugar (150 g) (for the filling)
  • 3 tsp cinnamon (8 g) 6– (for the filling)
  • 7 biscoff cookies, crushed for the bottom layer : i used (for the filling)
  • 2 tbsp biscoff and about (for the filling)
  • 1/2 cup of heavy cream & (for the filling)
  • 3 tbsp of brown sugar mixed it all and spread on the bottom of the pan (for the filling)
  • 4 oz cream cheese, softened (113 g) (for the frosting)
  • 2 tbsp butter, softened (28 g) (for the frosting)
  • 3 heaping tbsp biscoff cookie butter (90 g) (for the frosting)
  • 1 cup powdered sugar (120 g), adjust to taste (for the frosting)
  • 1 tsp vanilla (5 g) extra biscoff cookies for topping instructions: warm the milk ( not too hot to where you can’t touch it ) (for the frosting)

Instructions

  1. Then stir in the sugar and yeast
  2. Let it sit for 5–10 minutes until foamy
  3. Add in the egg, egg yolk, melted butter, and salt, then begin adding the flour
  4. Mix until a dough forms
  5. Knead lightly, adding a little more flour as needed until the dough is no longer sticking to your hands but still tacky
  6. Knead using a bit of oil instead of flour until smooth
  7. Place the dough into an oiled bowl, cover with plastic wrap and a towel, and let rise in a warm spot for about 1 hour or until doubled
  8. For the filling, add the biscoff cookie butter to the hot melted butter and let it melt slightly
  9. Stir in the brown sugar and cinnamon until combined
  10. Roll out the dough into a rectangle, spread the filling evenly over the surface, then sprinkle the crushed biscoff cookies on top
  11. Roll the dough up tightly and cut into rolls
  12. Place into a greased baking dish and let rest for about 15–20 minutes
  13. Bake at 350°f until golden and cooked through, about 20–25 minutes depending on size
  14. For the frosting, whip the softened cream cheese and biscoff cookie butter together until smooth
  15. Add the softened butter and mix again, then add the powdered sugar and vanilla and whip until fluffy
  16. Spread over warm (not hot) rolls and finish with extra crushed biscoff cookies on top
