Banana Oatmeal Chocolate Chip Cookies

Ingredients
- 100 g banana (1 large), mashed
- 100 g light brown sugar (1/2 cup)
- 85 g melted butter (6 tbsp)
- 1 large egg yolk
- 1 tsp vanilla
- 150 g all purpose flour (1 1/4 cup)
- 100 g rolled oats (1 cup)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 150 g chocolate chips
Instructions
- Whisk together the mashed bananas, sugar, melted butter, egg yolk, and vanilla.
- Then add the flour, oats, baking soda, and chocolage chips. Fold gently until no streaks of flour remain. Refrigerate for 1 hour minimum (best if overnight).
- Preheat oven to 180C (350F) . Scoop the dough into balls and add to a parchment lined baking tray. add more chocolates on top. Bake for 11-14mins.
