Banana crumble skillet cookie
A brown-sugar cookie base layered with caramelized cinnamon bananas, sweet cream cheese and oat crumble, baked in one skillet.

Ingredients
- For the cookie base: 130 g butter, room temperature
- 80 g brown sugar
- 40 g white sugar
- 1 egg
- 5 g vanilla
- 190 g flour
- 3 g baking soda
- 2 g salt
- For the caramelized bananas: 550 g banana chunks
- 40 g butter
- 50 g brown sugar
- 2 g cinnamon
- 2 g salt
- 5 g lemon juice
- Optional white layer: 60 g cream cheese + 30 g powdered sugar
- For the crumble: 90 g flour
- 70 g oats
- 80 g brown sugar
- 90 g cold butter
Instructions
- Preheat the oven to 180°C (350°F). Rub the crumble ingredients together into a sandy texture.
- Beat the butter with both sugars until creamy, add the egg and vanilla, then the flour, baking soda and salt until just combined.
- Press the cookie dough evenly into a 28 cm oven-safe skillet.
- Melt the butter and brown sugar in another pan, add the bananas, cinnamon, salt and lemon juice, and cook 2–3 minutes until glossy and lightly caramelized.
- Dot the cream cheese mixture over the dough, spoon the bananas on top, and scatter the crumble without pressing.
- Bake 30–35 minutes, until golden with crisp edges. Serve warm from the skillet.
