Banana chocolate chip cookies
Bold, saucy banana chocolate chip cookies that disappears from the pan before it reaches the table.

Ingredients
- 2 1/4 cup all purpose flour
- 1 tbsp cornstarch
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp espresso powder
- 1/2 tsp cinnamon powder
- 1 egg + egg yolk
- 1 cup dark brown sugar
- 3 tbsp granulated sugar
- 1 cup unsalted butter, cold and cubed
- 1/4 cup very ripe banana, mashed
- 1 tbsp vanilla bean paste
- 1 cup semi sweet chocolate
- 1/2 cup milk chocolate
- 1 tbsp milk powder
Instructions
- In a mixing bowl, combine the dry ingredients: all-purpose flour, salt, baking soda, baking powder, cinnamon powder, espresso powder, and milk powder. Mix them thoroughly and set aside.
- In a stand mixer bowl or a mixing bowl, add the cold butter.
- Beat it vigorously for 3-4 minutes until it becomes creamy.
- Then, add the brown sugar and granulated sugar.
- Mix them for 2-3 minutes until they are well incorporated.
- Crack in the egg and add the egg yolk.
- Whisk the mixture for1-2 min until it forms a paste.
- Finally, add the mashed banana and vanilla bean paste.
- Mix until they are well combined.
- Add the dry ingredients to the wet batter, mix to combine . Add in the chocolate and mix. Be careful not to overmix the batter.
- Line a baking sheet with parchment paper .Form 10 to 12 cookie dough balls out of the dough. And freeze for two hours or overnight.
- Preheat the oven to 350°F and bake the cookies for 16 to 18 minutes or until crispy from the edges and gooey in the center let cool completely for 30-35 min before serving and enjoy!
Tip: Pat the protein dry before it hits the pan — moisture is what stops a proper crust from forming.
