Banana chocolate chip cookies

Ingredients

  • 2 1/4 cup all purpose flour
  • 1 tbsp cornstarch
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp espresso powder
  • 1/2 tsp cinnamon powder
  • 1 egg + egg yolk
  • 1 cup dark brown sugar
  • 3 tbsp granulated sugar
  • 1 cup unsalted butter, cold and cubed
  • 1/4 cup very ripe banana, mashed
  • 1 tbsp vanilla bean paste
  • 1 cup semi sweet chocolate
  • 1/2 cup milk chocolate
  • 1 tbsp milk powder

Instructions

  1. In a mixing bowl, combine the dry ingredients: all-purpose flour, salt, baking soda, baking powder, cinnamon powder, espresso powder, and milk powder. Mix them thoroughly and set aside.
  2. In a stand mixer bowl or a mixing bowl, add the cold butter.
  3. Beat it vigorously for 3-4 minutes until it becomes creamy.
  4. Then, add the brown sugar and granulated sugar.
  5. Mix them for 2-3 minutes until they are well incorporated.
  6. Crack in the egg and add the egg yolk.
  7. Whisk the mixture for1-2 min until it forms a paste.
  8. Finally, add the mashed banana and vanilla bean paste.
  9. Mix until they are well combined.
  10. Add the dry ingredients to the wet batter, mix to combine . Add in the chocolate and mix. Be careful not to overmix the batter.
  11. Line a baking sheet with parchment paper .Form 10 to 12 cookie dough balls out of the dough. And freeze for two hours or overnight.
  12. Preheat the oven to 350°F and bake the cookies for 16 to 18 minutes or until crispy from the edges and gooey in the center let cool completely for 30-35 min before serving and enjoy!
Tip: Pat the protein dry before it hits the pan — moisture is what stops a proper crust from forming.
