Brown butter banana chocolate chip cookies
The best fate for overripe bananas: soft, cinnamon-scented cookies with browned butter and melty chocolate chips.

Ingredients
- 85 g unsalted butter, melted and browned
- 200 g ripe banana, mashed (about 2 medium)
- 120 g brown sugar
- 1 large egg yolk
- 2 tsp vanilla extract
- 220 g all-purpose flour (1 3/4 cups)
- 3/4 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2 tsp cinnamon
- 130 g chocolate chips (2/3 cup)
Instructions
- Preheat the oven to 175°C (350°F) and line a baking sheet with parchment.
- Brown the butter until it's nearly brown and smells nutty, then let it cool slightly.
- Mix the butter with the sugar, mashed banana, egg yolk and vanilla.
- Add the flour, baking soda, baking powder, salt and cinnamon, mixing just until combined.
- Fold in the chocolate chips.
- Chill the dough 30–45 minutes — this is the key step.
- Form 50–55 g balls and bake 11–13 minutes, until the edges are golden and the centers still soft.
- Rest 10 minutes on the tray before moving.
Tip: The chill keeps the banana dough from spreading into pancakes — don't skip it.
