Ingredients

  • 85 g unsalted butter, melted and browned
  • 200 g ripe banana, mashed (about 2 medium)
  • 120 g brown sugar
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 220 g all-purpose flour (1 3/4 cups)
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 130 g chocolate chips (2/3 cup)

Instructions

  1. Preheat the oven to 175°C (350°F) and line a baking sheet with parchment.
  2. Brown the butter until it's nearly brown and smells nutty, then let it cool slightly.
  3. Mix the butter with the sugar, mashed banana, egg yolk and vanilla.
  4. Add the flour, baking soda, baking powder, salt and cinnamon, mixing just until combined.
  5. Fold in the chocolate chips.
  6. Chill the dough 30–45 minutes — this is the key step.
  7. Form 50–55 g balls and bake 11–13 minutes, until the edges are golden and the centers still soft.
  8. Rest 10 minutes on the tray before moving.
Tip: The chill keeps the banana dough from spreading into pancakes — don't skip it.
