Bakery Banana Chocolate Chip Muffins

Ingredients
- 2 large eggs
- 350 g mashed bananas (approx 3 large bananas)
- 100 g granulated sugar (1/2 cup)
- 100 g light brown sugar (1/2 cup)
- 120 ml vegetable oil (1/2 cup)
- 60 g plain yogurt (1/4 cup)
- 60 ml milk (1/4 cup)
- 1 tsp vanilla
- 280 g all-purpose flour (2 1/4 cups)
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 150 g chocolate chips
Instructions
- In a mixing bowl, whisk together the eggs and sugars. Add the mashed bananas and the rest of the wet ingredients: oil, yogurt, milk, vanilla. Mix thoroughly.
- Sift together the dry ingredients then add to the wet ingredients: flour, baking powder, baking soda and salt. Mix until well combined. Do not overmix.
- Fold in the chocolate chips.
- Line a 12 hole muffin pan with muffin liners and divide the batter equally.
- Bake at 220C (425F) for 5 mins, then wihile keeping the muffins in the oven, bring down temperature to 180C (350F) and bake for another 13-15 mins.
- Check doneness by inserting a toothpick and no wet batter comes with it.
Tip: Line the pan with parchment overhanging the sides so you can lift the whole slab out.
