Ingredients
- 3 tbsp (42g) unsalted butter, melted & cooled (for the batter)
- 3 tbsp (42g) vegetable oil (for the batter)
- 1/2 cup (100g) granulated sugar (for the batter)
- 1/4 cup (50g) light brown sugar, packed (for the batter)
- 1 tsp vanilla extract (for the batter)
- 1 large egg, room temp (for the batter)
- 1/3 cup (80ml) whole milk, room temp (for the batter)
- 1/3 cup (80g) full-fat plain Greek yogurt or sour cream, room temp (for the batter)
- 1 3/4 cups (220 g) all-purpose flour, spooned & leveled or weighed (don't pack it in) (for the batter)
- 2 tsp baking powder (for the batter)
- 1/2 tsp baking soda (for the batter)
- 1/4 tsp salt (for the batter)
- 1 tbsp cornstarch (optional, keeps it extra soft) (for the batter)
- 3 tbsp (30g) finely crushed freeze-dried strawberries (it should look like a powder after crushing it) (for the batter)
- 1/2 cup (113g) butter, melted (for the coating)
- 1/2 cup (100g) granulated sugar (for the coating)
- 2 tbsp finely crushed freeze dried strawberries (for the coating)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease two 6-cavity donut pans.
- Mix together the butter, oil, and both sugars until well combined.
- Whisk in the egg and vanilla until smooth.
- Add in the milk and yogurt/sour cream.
- In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, and freeze-dried strawberry powder.
- Gently fold the dry ingredients into the wet until just combined. Do not overmix.
- Spoon or pipe the batter into the prepared donut pans
- Bake for 10-15 minutes, until a toothpick comes out clean/mostly clean.
- Cool in pan 5 minutes, then transfer to a wire rack.
- While still warm (but not hot), brush or toss the donuts in melted butter then coat evenly in strawberry sugar.
