Ingredients
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 eggs, room temp
- 2 tsp vanilla extract/paste
- 1/2 cup (120g) sour cream, room temp
- 2 tbsp (30g) whole milk, room temp
- 1 2/3 cups (200g) all-purpose flour, spooned & leveled or weighed (don't pack it in)
- 2 tsp baking powder
- 1/2 tsp salt
- 2 cups diced apples (~2 medium apples, peeled, cored, and diced small) (for the apples)
- 2 tbsp (25g) granulated sugar (for the apples)
- 1 tsp cinnamon (for the apples)
- 1/3 cup (67g) packed brown sugar (for the cinnamon sugar layer)
- 2 tsp cinnamon (for the cinnamon sugar layer)
- 1 cup (120g) powdered sugar (for the glaze)
- 1-2 tbsp milk (adjust for desired consistency) (for the glaze)
- 1 tsp vanilla extract/paste (for the glaze)
- Pinch salt (for the glaze)
Instructions
- Prep the cinnamon apples and cinnamon sugar. Set aside.
- Preheat oven to 350°F and line/grease a 9x5 loaf pan.
- Cream the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs and vanilla.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Alternate adding the flour mixture and the milk/sour cream, starting & ending with the flour. Gently mix between each addition.
- Don't over mix, stop as soon as everything is incorporated.
- Add half the batter to the prepared loaf pan, smoothing it out.
- Add a layer of half the cinnamon apples and sprinkle half of the cinnamon sugar on top.
- Add the rest of the batter, followed by the rest of the apples, then the rest of the cinnamon sugar.
- Bake for 55-60 minutes or until a toothpick comes out clean/with just a few moist crumbs.
- I topped with a little more cinnamon sugar, but that's optional.
- Let cool completely.
- Drizzle the glaze over the completely cooled loaf.
