The Sheet-Pan Dinner Formula: Protein + Veg + 20 Minutes
The sheet-pan dinner is the closest thing home cooking has to autopilot: one pan, one temperature, and the oven does the work while homework gets checked. But "throw it all on a pan" fails without two rules — matching cook times and refusing to crowd.
The formula
425°F + 1 protein + 2 vegetables + fat + salt. Toss everything in olive oil, season hard, spread in a single layer. Steam is the enemy of browning: if pieces touch, use two pans.

The staggering trick
Vegetables are not democratic: potatoes need 30 minutes, broccoli needs 15. Start the slow movers first, then slide the pan out at the halfway mark and add the quick ones. One pan, two waves, everything done together — the same choreography behind sheet-pan chicken kebab wraps.
Serving it like dinner
The pan is the ingredient, not the plate. Pile the results into warm flatbreads, over rice, or alongside a stack of tortillas the way you would for smash tacos or crispy beef tacos.
