Salty Soup, Sticky Rice, Broken Sauce: Fixing 12 Common Cooking Mistakes
Every cook ruins dinner sometimes; good cooks just know the exits. Here are the twelve rescues worth memorizing, in the order panic usually arrives.
Too salty
1. Dilute — add unsalted liquid or more of the main ingredient. 2. Add acid: lemon or vinegar does not remove salt but rebalances the perception of it. 3. The potato myth barely works; dilution is the real fix.
Too spicy
4. Dairy is the antidote — cream, yogurt or cheese binds capsaicin, which is why a fiery harissa dish calms instantly with a yogurt swirl. 5. Sweetness (a teaspoon of honey) rounds off the burn.
Broken or curdled sauce
6. A cream sauce that split from high heat comes back with a splash of cold cream whisked in off the heat. 7. For a pasta sauce like garlic parmesan, a ladle of starchy pasta water plus vigorous stirring re-emulsifies almost anything. 8. Cheese gone grainy means the heat was too high — remove from heat before the cheese goes in next time.
Texture disasters
9. Sticky rice: spread on a sheet pan five minutes to steam off. 10. Soggy fried food re-crisps in a 400°F oven or air fryer — never the microwave (full method in how to re-crisp fries). 11. Gluey mashed potatoes cannot be unwhipped, but folded with egg and pan-fried they become excellent potato cakes.
Burnt bottom
12. Do not stir. Transfer everything above the burn layer to a clean pot and leave the scorched crust behind — the smoky taste stays with the pan. Dinner keeps its dignity, and so do you.
