Ingredients

  • For the potatoes — 3-4 large russets potatoes, cut into desired shape
  • For the potatoes — 2 tbsp tomato paste
  • 1-2 tbsp harissa sauce — 1 tbsp fresh garlic, minced
  • 1-2 tbsp harissa sauce — 1 fresh red chili, seeded and chopped
  • 1-2 tbsp harissa sauce — 2 tbsp fresh parsley, chopped
  • 1-2 tbsp harissa sauce — Salt to taste
  • 1-2 tbsp harissa sauce — 1/2 tsp black pepper
  • 1-2 tbsp harissa sauce — 1/2 tsp garlic powder
  • 1-2 tbsp harissa sauce — 1 tbsp fresh lemon juice
  • 1-2 tbsp harissa sauce — 3 tbsp oil + more for deep frying
  • For the Harrisa garlic mayo — 1/2 cup mayonnaise
  • For the Harrisa garlic mayo — 1 tbsp tomato paste
  • 1 tbsp Harrisa sauce — 2 tbsp red onion, diced
  • 1 tbsp Harrisa sauce — 1 tsp parsley, chopped
  • 1 tbsp Harrisa sauce — Salt to taste
  • 1 tbsp Harrisa sauce — 1 tbsp garlic powder
  • 1 tbsp Harrisa sauce — 1 tsp smoked paprika powder
  • 1 tbsp Harrisa sauce — 1 tsp black pepper powder
  • 1 tbsp Harrisa sauce — 1 tsp lemon juice

Instructions

  1. Wash the potatoes and cut them into desired shape. Rinse them again multiple times until water runs clear. Pat dry them completely.
  2. Fry the potatoes in batches for 4–5 minutes, until just tender but not colored.
  3. Remove and drain on a wire rack or paper towels.
  4. Let them rest for 10–15 min Increase the oil temperature to 365 F.
  5. Fry the potatoes again in batches for 2–3 minutes, until golden brown and crispy.
  6. In a wide pan, heat oil over medium heat.
  7. Add minced garlic and chopped red chili.
  8. Sauté for 30–45 seconds until fragrant.
  9. Stir in tomato paste and harissa sauce.
  10. Cook for 1–2 minutes to deepen flavor.
  11. Add black pepper, garlic powder, and salt to taste.
  12. Toss in the fried potatoes and gently mix until fully coated.Finish with fresh parsley and lemon juice.
  13. For the harrisa garlic sauce: In a bowl, combine mayonnaise, tomato paste, and harissa sauce. Add diced red onion, parsley, garlic powder, smoked paprika, black pepper, salt, and lemon juice.
  14. Mix well until smooth and creamy.
Tip: Get the pan properly hot before adding anything — most sogginess starts with a lukewarm pan.
