How to Fix a bland soup (Rescue in Minutes)
Dinner is on the line and something went sideways. Deep breath — this is fixable, usually in under five minutes.
The rescue, in order
- Salt first — 90% of 'bland' is under-salted. Add, stir, wait 30 seconds, taste.
- Then acid: a squeeze of lemon or splash of vinegar wakes everything up.
- Then depth: parmesan rind, soy sauce, a spoon of tomato paste bloomed in the ladle, or smoked paprika.
- Finish with fat: a swirl of cream, olive oil or butter carries flavor to the tongue.

Flavor is salt + acid + umami + fat in balance; bland soup is almost always missing the first two, not more herbs.
