  • For the chicken — 1 lb. chicken tenders
  • For the chicken — 2 cups butter milk
  • 1/3 cup hot sauce — 4 tbsp pickle juice
  • 1/3 cup hot sauce — Salt to taste
  • 1/3 cup hot sauce — 1 tbsp smoked paprika powder
  • 1/3 cup hot sauce — 1 tsp red chili powder
  • 1/3 cup hot sauce — 1 tsp black pepper powder
  • 1/3 cup hot sauce — 1 tbsp garlic powder
  • 1/3 cup hot sauce — Chosen foods avocado Oil for frying
  • For the dry batter — 3 cups all-purpose flour
  • For the dry batter — 1/3 cup corn starch
  • For the dry batter — 2 tbsp baking powder
  • For the dry batter — Salt to taste
  • For the dry batter — 1 tbsp garlic powder
  • For the dry batter — 1 tbsp smoked paprika powder
  • For the dry batter — 1 tsp black pepper
  • For the hot honey glaze — 1/2 cup unsalted butter

Instructions

  1. Marinade the chicken: In a mixing bowl add chicken tenders, pour in the butter milk, hot sauce, pickle juice, salt, pepper, garlic powder, smoked paprika powder, red chili powder. Mix well to combine. Let the chicken marinade for 3-4 hours or overnight.
  2. Make the dry batter: In a bowl add all-purpose flour, corn starch, baking powder, salt, pepper, paprika, garlic powder. Mix well to combine.
  3. Coat the marinated chicken into a dry flour mixture, then dip it back into the buttermilk marinade, and again into the dry flour mixture pressing gently to help the coating stick. Repeat until all the chicken tenders are doubled drenched
  4. Place the chicken over a wire rack set over a baking sheet and leave for 30 min before frying.
  5. Heat 2-3 inches of avocado oil to 350 F. Carefully drop 2-3 chicken tenders to the hot oil and fry for 4-5 min until golden brown and crispy and the internal temp reaches 165 F.
  6. Make the hot honey glaze: In a pan add butter on medium low heat, once butter is melted, add honey and hot sauce. Heat over medium stirring constantly low heat until everything is melted and combined.
  7. Brush over fried chicken until evenly coated. Or serve it as a dipping sauce with ranch dressing and enjoy.
Tip: Taste the sauce before assembling and adjust the salt then, not after.
