Cheesy meatball sub sandwich

Juicy beef-and-pork meatballs simmered in tomato sauce, piled into soft rolls and broiled under a blanket of melted mozzarella.

Ingredients

  • 600 g ground meat (300 g beef + 300 g pork)
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • Fresh parsley, to taste
  • Breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 600 g tomato sauce
  • Grated Parmigiano, plus a Parmesan rind for the sauce
  • Salt, paprika, garlic powder and black pepper
  • Fresh basil (optional)
  • For the sandwiches: hot dog or sub rolls
  • Mozzarella cheese
  • Parsley and Parmesan, to finish

Instructions

  1. Mix the ground meat with the shallot, garlic, parsley, breadcrumbs, egg, milk, a handful of Parmigiano and the seasonings. Roll into small meatballs.
  2. Heat extra virgin olive oil in a skillet and brown the meatballs about 5 minutes per side.
  3. Pour in the tomato sauce, tuck in the Parmesan rind and basil, and simmer until the meatballs are cooked through and the sauce has thickened.
  4. Split the rolls, fill them with meatballs and sauce, and top generously with mozzarella.
  5. Broil for about 10 minutes, until the cheese is melted and the bread is toasted. Finish with parsley and Parmesan.
