Cheesy meatball sub sandwich
Juicy beef-and-pork meatballs simmered in tomato sauce, piled into soft rolls and broiled under a blanket of melted mozzarella.

Ingredients
- 600 g ground meat (300 g beef + 300 g pork)
- 1 shallot, finely chopped
- 3 garlic cloves, minced
- Fresh parsley, to taste
- Breadcrumbs
- 1 egg
- 1/4 cup milk
- 600 g tomato sauce
- Grated Parmigiano, plus a Parmesan rind for the sauce
- Salt, paprika, garlic powder and black pepper
- Fresh basil (optional)
- For the sandwiches: hot dog or sub rolls
- Mozzarella cheese
- Parsley and Parmesan, to finish
Instructions
- Mix the ground meat with the shallot, garlic, parsley, breadcrumbs, egg, milk, a handful of Parmigiano and the seasonings. Roll into small meatballs.
- Heat extra virgin olive oil in a skillet and brown the meatballs about 5 minutes per side.
- Pour in the tomato sauce, tuck in the Parmesan rind and basil, and simmer until the meatballs are cooked through and the sauce has thickened.
- Split the rolls, fill them with meatballs and sauce, and top generously with mozzarella.
- Broil for about 10 minutes, until the cheese is melted and the bread is toasted. Finish with parsley and Parmesan.
