Spicy chicken caesar wrap

Ingredients

  • For the chicken — 1 lb boneless chicken breast, halved lengthwise and pounded to even thickness

  • For the dry batter — 1 cup all purpose flour

Instructions

  1. Pat the chicken dry and lay them fla. Sprinkle salt, pepper, smoked paprika powder, and garlic powder evenly on both sides.
  2. To make the dry batter, mix all-purpose flour, corn starch, salt, pepper, smoked paprika powder, and garlic powder in a dish.
  3. In another dish, whisk together eggs and water.
  4. In a third dish, combine panko breadcrumbs and parsley.
  5. Coat the chicken in the dry batter, then dip it into the egg wash, and finally coat it with the panko breadcrumbs.
  6. Heat oil to 365°F and fry the chicken cutlets until they are golden brown and crispy, about 4-5 minutes or until the internal temperature reaches 165°F. Slice the chicken and set aside.
  7. Make the spicy Caesar salad by combining mayonnaise, grated garlic, Worcestershire sauce, Dijon mustard, olive oil,lemon juice, Parmesan cheese, salt, pepper, smoked paprika powder, and Calabrian chili paste in a bowl. Add water if needed.
  8. Reserve half of the dressing and mix it well with the lettuce in the other half.
  9. Assemble by taking a tortilla, adding the spicy Caesar dressing, followed by the Caesar salad and chicken slices. Close the wrap and let it warm up for a bit.
Tip: Get the pan properly hot before adding anything — most sogginess starts with a lukewarm pan.
