Ingredients

  • 2 lb boneless chicken breast
  • Oil for frying
  • For the wet batter — 1 cup all purpose flour

  • 1 tbsp Cajun seasoning — 1 tbsp garlic powder
  • 1 tbsp Cajun seasoning — 1 tbsp onion powder
  • 1 tbsp Cajun seasoning — 1 tbsp baking powder
  • 1 tbsp Cajun seasoning — 3/4 cup water ( less or more to make thick batter)
  • For the dry batter — 1 cup all purpose flour

  • For the raising canes sauce — 1/2 cup mayonnaise
  • For the raising canes sauce — 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce — 1 tbsp garlic powder
  • 1 tbsp Worcestershire sauce — Salt and pepper to taste
  • 1 tbsp Worcestershire sauce — To assemble
  • 1 tbsp Worcestershire sauce — 4 bread loafs or buns
  • 1 tbsp Worcestershire sauce — 2 tbsp butter, for toasting the buns
  • Raising canes sauce — 1 cup lettuce
  • Raising canes sauce — 1/2 cup pickled dill chips

Instructions

  1. Cut the chicken into thick strips, pat dry and set aside.
  2. In a mixing bowl make the wet batter by combining all purpose flour, salt pepper, garlic powder , onion powder , Cajun seasoning, baking powder. Mix well. Add water to make a thick batter. Whisk until smooth and fluffy combined.
  3. In a separate bowl make dry batter by adding all purpose flour, salt pepper, garlic powder, onion powder, Cajun seasoning. Mix well.
  4. Coat the chicken into wet batter then the dry batter and place on a tray.
  5. Note: You can also freeze the chicken at this point for later use
  6. Heat oil in a pan on high. Once the oil is hot add the chicken strips. Fry on medium heat for 15-18 minutes or until fully cooked and crispy.
  7. Make the sauce by combining all the ingredients listed above in a mixing bowl.
  8. Toast the buns by spreading butter on both sides. Add lettuce leaves, chicken strips, and dill pickles. Top with sauce and close the sandwich. Serve warm with fries and more sauce.
Tip: Get the pan properly hot before adding anything — most sogginess starts with a lukewarm pan.
