Ingredients

  • 1 boneless chicken breast
  • 1 yellow onion , diced
  • 1 tbsp fresh garlic, minced
  • 2 tbsp oil
  • 2 tbsp tomato paste
  • Salt to taste
  • 1 tbsp smoked paprika powder
  • 1 tsp garlic powder
  • 1 tsp Cajun seasoning — 1/2 tsp black pepper powder
  • 1 tsp Cajun seasoning — 1/2 tsp cumin powder
  • 1 tsp Cajun seasoning — 1 cup water
  • 1 tsp Cajun seasoning — 1 tbsp lime juice
  • 1 tsp Cajun seasoning — 1 tbsp fresh cilantro, chopped
  • For the taco sauce — 1/3 cup mayonnaise
  • For the taco sauce — 1/3 cup sour cream
  • For the taco sauce — Salt to taste
  • For the taco sauce — 1 tsp smoked paprika powder
  • For the taco sauce — 1 tsp garlic powder
  • For the taco sauce — 2-3 tbsp hot sauce (adjust to taste)
  • 1 tsp cajun seasoning — 1 tbsp lime juice
  • 1 tsp cajun seasoning — 2-3 tbsp water ( to thin the sauce )
  • For the salsa — 1 yellow onion, diced
  • For the salsa — 2 tomatoes, seeded and dicee
  • For the salsa — 1 tbsp lime juice
  • For the salsa — Salt to taste
  • For the salsa — 1 tsp cilantro , chopped

Instructions

  1. Heat the oil in a pan over medium heat. Add chicken, onions, minced garlic. Season with smoked paprika, garlic powder, Cajun seasoning, black pepper, cumin, salt. Add Tomato paste , lime juice and water.
  2. Bring to a gentle simmer, cover, and cook for 20-30 minutes, or until the chicken is tender
  3. Remove the chicken, shred it using two forks, then return it to the pan.
  4. Simmer uncovered for 5–10 minutes until the sauce thickens and coats the chicken.
  5. Turn off the heat, add chopped coriander. Set aside
  6. In a bowl, whisk together mayonnaise and sour cream until smooth.Add smoked paprika, garlic powder, Cajun seasoning, hot sauce, lime juice, and salt.Gradually add water until the sauce reaches a drizzleable consistency. Taste and adjust seasoning if needed.
  7. In a bowl, combine diced onion and tomatoes.Add lime juice, salt, and chopped parsley.Mix gently and set aside to let flavors meld.
  8. Heat a pan with a small amount of oil over medium heat. Lightly fry the mini tortillas until warm and slightly golden on both sides.
  9. Sprinkle mozzarella cheese onto each tortilla while still hot. Add a generous spoon of pull apart chicken.
  10. Drizzle with taco sauce and top with fresh salsa. Serve immediately.
Tip: Let the meat rest a few minutes before slicing; it keeps the juices where they belong.
