Ingredients
- For the chicken — 2 lb boneless chicken breast, minced
- For the chicken — Salt to taste
- For the chicken — 1 tbsp garlic powder

- For the dry battery — 1/2 cup all purpose flour
- For the wet batter — 1 cup all purpose flour
- For the wet batter — 2 tbsp corn starch

- For the sauce — 1 cup mayonnaise
- For the sauce — 1 tbsp yellow mustard

- For the sauce — 1/2 tsp white vinegar

- For the sauce — To assemble
- For the sauce — 1 cup lettuce, diced
- For the sauce — 8 brioche buns
Instructions
- In a bowl add minced chicken, season with salt, pepper, garlic powder, onion powder. Mix well to combine.
- Prepare a tray with parchment paper, grease your hands with some cooking oil and shape the minced chicken into 7-8 patties. Lay them on the sheet and freeze for about 1 hour or until frozen.
- Make wet batter : In a wide bowl add all purpose flour, corn starch, salt, pepper, garlic powder and onion powder. Gradually Pour in water and mix until there are no lumps and achieving a thick pancake like consistency.
- Make dry battery: In a bowl add all purpose flour.
- Coat chicken patties in the dry battery first then in the wet battery.
- Heat oil to 360 F, once the oil is hot turn heat to medium and carefully add chicken patties to the oil Fry in batches, do not overcrowd the pan while frying , Fry for 5-6 min flipping sides in between or until golden brown and crispy.
- Make the sauce by combining mayonnaise, Dijon mustard salt, onion powder and vinegar.
- Toast the buns and assemble by applying sauce on the bun followed by chicken patty, lettuce, apply some more sauce on the top bun and close. Serve warm and enjoy.
Tip: Taste the sauce before assembling and adjust the salt then, not after.
