Lomo saltado (Peruvian steak stir-fry)
Peru's beloved beef stir-fry: seared sirloin tossed with onions, tomatoes and a soy-oyster sauce, finished with fries and served over rice.

Ingredients
- 700 g sirloin or tenderloin, in strips
- Salt, pepper and a touch of cumin
- French fries (soaked in ice water 30 minutes, double-fried)
- 1 onion, in thick slices
- Tomatoes, in wedges
- Green onion and cilantro
- For the sauce: 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp vinegar
- 1/2 tbsp cornstarch
- 1 tbsp beef broth or water
- Cooked rice, to serve
Instructions
- Season the beef with salt, pepper and cumin. Whisk the sauce ingredients together.
- Fry the potatoes once until just cooked, rest 1 minute, then fry again until crisp.
- Sear the beef in a screaming-hot pan 2 minutes per side and set aside.
- Sauté the onion briefly, add the tomatoes for a few seconds, then return the beef.
- Pour in the sauce, toss until glossy, and finish with green onion and cilantro.
- Fold in the fries at the last moment and serve immediately over rice.
