Instructions

  1. Let the mixture sit for 20–30 minutes before serving. This allows the garlic, herbs, and tomatoes to infuse the olive oil and makes a huge difference.
  2. Serve with warm crusty bread, focaccia, or a fresh baguette.
  3. The most important ingredient is actually the olive oil use a peppery, high-quality extra virgin olive oil and it will elevate everything else.
Tip: Let the meat rest a few minutes before slicing; it keeps the juices where they belong.
