Ingredients

  • For the chicken — 1 chicken breast, halved lengthwise and pounded
  • For the chicken — Salt to taste
  • For the chicken — 1 tbsp garlic powder

  • For the chicken — 1 tbsp onion powder
  • For the chicken — 2 cups buttermilk
  • 2 tbsp hot sauce — 2 tbsp pickle juice
  • 2 tbsp hot sauce — Chosen food avocado oil for frying
  • For the dry batter — 1 1/2 cup all purpose flour
  • For the dry batter — 2 tbsp corn starch
  • For the dry batter — 1 tsp baking powder
  • For the dry batter — Salt to taste

  • For the dry batter — 1 tbsp smoked paprika powder

  • For the Caesar salad — 1/2 cup chosen foods mayonnaise
  • For the Caesar salad — 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce — 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce — 2 tsp lemon juice
  • 1 tbsp Worcestershire sauce — 2 cups lettuce washed and chopped
  • 1 tbsp Worcestershire sauce — 2 tbsp extra virgin olive oil
  • 1 tbsp Worcestershire sauce — 1/3 cups freshly grated Parmesan cheese
  • 1 tbsp Worcestershire sauce — 1 tsp freshly ground black pepper
  • 1 tbsp Worcestershire sauce — Salt to taste

Instructions

  1. Marinate the chicken in buttermilk, hot sauce, pickle juice, garlic powder, onion powder, smoked paprika, black pepper, and salt for at least 1 hour or overnight.
  2. Mix flour, cornstarch, baking powder, garlic powder, onion powder, smoked paprika, black pepper,& salt. Dredge the chicken in the flour mixture, dip it back into the marinade, then coat once more for an extra crispy crust.
  3. Fry in Chosen Foods Avocado Oil at 350°F until golden & cooked through (165°F).
  4. Warm together honey, hot sauce, red pepper flakes, butter, garlic powder, and salt. Remove from the heat, stir in apple cider vinegar, then brush over the fried chicken.
  5. Whisk together Chosen Foods Mayonnaise, Dijon mustard, Worcestershire sauce, garlic, lemon juice, olive oil, Parmesan, salt, and pepper. Toss the lettuce with most of the dressing & reserve some for the bread.
  6. Toast the buttered mini loaves until golden. Spread with the reserved Caesar dressing, add the hot honey chicken, top with the Caesar salad, and finish with freshly grate
Tip: Let the meat rest a few minutes before slicing; it keeps the juices where they belong.
