Homemade fresh pasta with no tools
Flour, egg, a drop of oil and your hands — silky fresh pasta ribbons rolled and cut with nothing but a pin and a knife.

Ingredients
- Per serving: 1/2 cup all-purpose flour
- 1 egg
- A drizzle of olive oil
- (Double everything for 2 servings: 1 cup flour, 2 eggs — and so on)
Instructions
- Mound the flour into a small volcano, crack the eggs into the center with the oil, and stir with a fork, pulling flour in from the sides little by little.
- Once it comes together, cut the shaggy dough as shown in the video and knead with the heel of your palm for 5–7 minutes, until smooth.
- Shape into a ball, wrap in film and rest 30 minutes.
- Flour the counter and roll thin with a rolling pin, turning the sheet as you go, until nearly translucent.
- Trim the edges straight, fold the sheet in loose pleats, and slice into ribbons. Cook 2–3 minutes in boiling salted water.
