Homemade fresh pasta with no tools

Flour, egg, a drop of oil and your hands — silky fresh pasta ribbons rolled and cut with nothing but a pin and a knife.

Ingredients

  • Per serving: 1/2 cup all-purpose flour
  • 1 egg
  • A drizzle of olive oil
  • (Double everything for 2 servings: 1 cup flour, 2 eggs — and so on)

Instructions

  1. Mound the flour into a small volcano, crack the eggs into the center with the oil, and stir with a fork, pulling flour in from the sides little by little.
  2. Once it comes together, cut the shaggy dough as shown in the video and knead with the heel of your palm for 5–7 minutes, until smooth.
  3. Shape into a ball, wrap in film and rest 30 minutes.
  4. Flour the counter and roll thin with a rolling pin, turning the sheet as you go, until nearly translucent.
  5. Trim the edges straight, fold the sheet in loose pleats, and slice into ribbons. Cook 2–3 minutes in boiling salted water.
