Creamy garlic shrimp linguine

Garlic-heavy shrimp in a buttery tomato-cream sauce tossed with linguine and finished with fresh parsley — gambas al ajillo meets pasta night.

Ingredients

  • 200 g linguine
  • 300 g shrimp, peeled
  • 4 garlic cloves, minced
  • 1/2 onion, finely chopped
  • A ladle of pasta water
  • 200 g heavy cream
  • Olive oil
  • 100 g butter
  • 20 g tomato paste
  • 1 cup tomato sauce
  • Fresh parsley
  • Salt, garlic powder, paprika, black pepper

Instructions

  1. Cook the linguine in salted boiling water until al dente; reserve a ladle of the water.
  2. Pat the shrimp very dry, season with salt, garlic powder and paprika, and sear in olive oil until just pink. Set aside.
  3. In the same pan, melt half the butter, soften the onion, then add the garlic and cook until fragrant.
  4. Stir in the tomato paste, the pasta water and the tomato sauce, then pour in the cream.
  5. Return the shrimp, toss in the linguine with the remaining butter and the parsley, and serve immediately.
