Crispy chicken vodka sauce sandwich
Breaded chicken cutlets and melted mozzarella on herbed garlic baguette, drowned in silky vodka sauce — the sandwich version of chicken parm night.

Ingredients
- 3 chicken fillets
- Flour, beaten egg and breadcrumbs (panko is great)
- 1 baguette
- Mozzarella cheese, for the chicken
- For the vodka sauce: olive oil, 50 g butter
- 1/2 onion, chopped
- 3 garlic cloves, minced
- 3 tbsp tomato paste
- 300 g tomato sauce
- 1 tbsp vodka (optional)
- 350 ml heavy cream
- Salt, pepper, garlic powder, paprika
- 1/2 cup grated Parmesan
- Fresh parsley
- For the bread: butter, chopped garlic, parsley or cilantro, herbes de Provence
Instructions
- Coat the chicken in flour, egg and breadcrumbs, and pan-fry until deep golden and cooked through. Top with mozzarella and cover until melted.
- For the sauce, soften the onion in the oil and butter, add the garlic, then the tomato paste; cook until brick red. Add the vodka and let it evaporate.
- Stir in the tomato sauce, then the cream and Parmesan, and season.
- Mix soft butter with garlic, herbs and herbes de Provence, spread on the split baguette and toast until golden.
- Layer the chicken on the bread, spoon the vodka sauce generously over, finish with parsley, and close before it escapes.
