Ingredients

  • For the chicken patties — 2 lb boneless chicken breast , minced

  • For the wet batter — 1 cup all purpose flour
  • For the wet batter — 1/2 cup corn starch
  • For the wet batter — 1 1/3 cup sparkling water ( less or more to adjust the consistency)

  • For the sauce — 1 cup mayonnaise

Instructions

  1. In a bowl, add minced chicken season with salt, pepper, garlic powder, smoked paprika, powder, onion powder. crack an egg and make well combined.
  2. Grease your hands with some oil and make small patties lay them flat on a prepared sheet and freeze them for about 30 to 40 minutes or until they are firm (not frozen).
  3. Make the wet batter: In a bowl, combine all-purpose flour, cornstarch, salt, pepper, smoked paprika powder, and garlic powder.
  4. Gradually add sparkling water to the dry ingredients and whisk until the batter is smooth.
  5. The consistency should resemble a thin pancake batter.
  6. Dip the patties in the wet batter. Shake off the excess batter.
  7. Heat oil in a pan to 350 F once the oil is hot carefully drop 2-3 patties in the oil. Fry for 5-6 min flipping side in between, until cooked through and golden crispy.
  8. Make the sauce in a bowl, combine mayonnaise, Dijon, mustard, yellow mustard, ketchup, pickle juice, salt, pepper, smoked paprika powder, garlic powder, turmeric and Honey mix well to combine.
  9. Assemble the buns: Lightly toast the slide, spread the sauce on both the top and the bottom bun.
  10. Place the chicken patty on the bottom half top it with pickles close the bun and serve warm.
Tip: Prep every component first; once the heat is on, this moves quickly.
