Crispy honey garlic butter chicken

Ingredients
- 2lb chicken thighs, cut into small cubes
- 1/2 cup all purpose flour
- 1/3 cup corn starch
- 1/2 tsp baking powder
- 1/2 cup sparkling water
- Salt to taste
- 1 tsp black pepper
- 1 tbsp garlic powder
- 2 tbsp soy sauce — 1/2 cup sparkling water or cold water
- For the honey glaze — 4 tbsp butter
- For the honey glaze — 2-3 tbsp honey
- 1 tbsp soy sauce — Sesame seeds ( for garnish )
- 1 tbsp soy sauce — 3-4 cloves garlic, finely minced
Instructions
- In a bowl, mix flour, cornstarch, baking powder, Black pepper, garlic powder, salt
- Add Soy sauce & Sparkling water
- Whisk until you get a smooth, slightly thick batter (like pancake batter).
- Add the chicken pieces into the batter and mix until fully coated.
- Heat oil to 350°F (175°C)
- Fry chicken in batches (don’t overcrowd) Cook for about 4–5 minutes, until lightly golden Remove and rest for 2–3 minutes
- For extra crispiness Fry again at 375°F for 2–3 minutes until deep golden and crispy Drain on a rack or paper towels
- In a pan over medium heat Melt butter. Add minced garlic, sauté until fragrant (about 30 seconds) Stir in honey, soy sauce Simmer for 1–2 minutes until slightly thickened.
- Add fried chicken to the sauce. Toss quickly to coat evenly Garnish with sesame seeds
Tip: Pat the protein dry before it hits the pan — moisture is what stops a proper crust from forming.
