Crispy beef shawarma

Ingredients
- 2 lbs (900 g) ground beef (80% lean, 20% fat)
- 1 medium yellow onion, finely grated or minced, excess liquid squeezed out
- 1/4 cup whole milk greek yogurt
- 1 tbsp fresh garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp all spice
- 1 tbsp smoked paprika powder
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp black pepper
- 1/2 tsp cayenne or Aleppo pepper
- Salt to taste
- 1 tsp sumac
- 2 tbsp fresh parsley
- Oil for pan frying
- For the garlic sauce — 1/2 cup mayonnaise

Instructions
- In a bowl, combine the ground beef, onion, Greek yogurt, garlic, spices, parsley, and salt. Mix well, cover, and refrigerate for at least 2 hours or overnight.
- Whisk together all the garlic sauce ingredients until smooth. Refrigerate until ready to use.
- Toss the sliced onions with lemon juice, olive oil, sumac, parsley, and salt. Let sit for 20 minutes.
- Spread a portion of the beef mixture between two sheets of parchment paper and roll into a thin layer (about 1/8 inch thick). Trim to fit your skillet.
- Heat a lightly oiled skillet over medium-high heat.
- Remove the top parchment, place the beef into the skillet, then peel away the remaining parchment.
- Cook for 3–4 minutes per side until browned and cooked through.
- Slice into strips and return to the skillet for 30–60 seconds to crisp the edges.
- Spread garlic sauce over shawarma bread, then top with the beef, tomatoes, sumac onions, pickled cucumbers, and French fries. Roll tightly.
- Lightly brush the wraps with oil and toast in a skillet for 2–3 minutes per side until golden and crispy. Serve immediately with extra garlic sauce and pickles.
Tip: Leftovers keep 3 days in the fridge and reheat best in a skillet, not the microwave.
