Ingredients

  • For the beef mixture — 1 lb. ground beef, 80% lean 20% fat
  • For the beef mixture — 1 small yellow onion, finely chopped
  • For the beef mixture — 1 tbsp fresh garlic, minced
  • For the beef mixture — 4 tbsp tomato paste
  • For the beef mixture — Salt to taste
  • For the beef mixture — 1 tsp black pepper
  • For the beef mixture — 1 tsp garlic powder
  • For the beef mixture — 1 tsp smoked paprika powder
  • For the beef mixture — 1/2 tsp red chili powder
  • For the beef mixture — 1 tsp red chili flakes
  • For the beef mixture — 1 cup water
  • For the beef mixture — 1 cup mixed bell peppers, diced
  • For the beef mixture — 1-2 Serrano peppers
  • For the beef mixture — 2 tbsp oil
  • For the beef mixture — To assemble
  • For the beef mixture — 8 medium tortillas, halved
  • For the beef mixture — 8oz Tillamook Farmstyle Mozzarella Shredded Cheese
  • For the beef mixture — 1 tsp dried parsley for garnish
  • For the beef mixture — Cooking spray
  • For the beef mixture — Toothpicks

Instructions

  1. In a pan, heat oil on medium heat.
  2. Once the oil is hot, add chopped onions and garlic.
  3. Sauté for 1 to 2 minutes until the onions become translucent.
  4. Then, add and sauté the beef for 2 to 3 minutes until it changes color.
  5. Add salt, pepper powder, red chili powder, garlic powder, and red chili flakes.
  6. Mix well and cook for 1 to 2 minutes until the spices are well combined.
  7. Add the tomato paste and stir until it’s fully incorporated.
  8. Cover the pan and stir occasionally until the mixture thickens.
  9. This should take about 10 to 12 minutes.
  10. Once the water has mostly evaporated and the beef is cooked, add the bell peppers and Serrano peppers cook for 3 to 4 minutes.
  11. Remove the pan from heat and set it aside.
  12. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  13. Shape each tortilla half into a cone and secure the seam with a toothpick. Lightly spray the outside of each cone with cooking spray.
  14. Place cones seam-side down on the baking sheet.
Tip: Pat the protein dry before it hits the pan — moisture is what stops a proper crust from forming.
