Ingredients
- 8 oz fettuccine pasta, boiled according to package instructions
- 1 tbsp oil
- 2 tbsp butter
- 1/2 cup yellow onion, chopped
- 4 cloves fresh garlic, finely minced
- 1 tsp red chili paste ( less or more adjust to taste ) or red chili flakes
- 3 tbsp tomato paste
- 1 tsp chicken bouillon powder
- 1 tsp smoked paprika powder
- Salt to taste
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 3/4 cup unsweetened heavy whipping cream
- 1/3 cup reserved pasta water
- 1/3 cup Parmesan cheese, freshly grated
Instructions
- In a pan, heat oil on medium-low heat.
- Once the pan is hot, add butter.
- As the butter starts to melt, add in the onion and garlic .
- Sauté for 2-3 minutes until the fragrance is released.
- Then, add in the red chili paste and tomato paste.
- Cook on medium-low heat for another 1 to 2 minutes.
- Add the seasoning, salt, pepper, smoked paprika powder, garlic powder, and chicken bouillon powder.
- Mix well, then add the heavy whipping cream.
- Cook the sauce on medium-low heat until it begins to thicken.
- If you prefer a thinner consistency, add a bit of pasta water.
- Then, add the boiled pasta and top it with Parmesan cheese.
- Mix well and serve it warm.
Tip: Let the meat rest a few minutes before slicing; it keeps the juices where they belong.
