- For the chicken — 1 lb boneless chicken breast

Instructions
- Prepare the chicken: In a bowl, add chicken, salt, pepper, garlic powder, smoked paprika powder, and onion powder. Drizzle oil on top and mix until nicely coated.
- Cook the chicken: In a pan, add oil and cook the chicken for 12-15 minutes or until fully cooked and spreadable. Shred the chicken.
- Prepare the filling: In a bowl, combine shredded chicken, carrots, cabbage, green onion, parsley, red onion, mayonnaise, sour cream, Dijon mustard, garlic powder, black pepper, smoked paprika powder, and salt. Mix well until combined.
- Assemble the sandwich: Place a layer of chicken mixture on a slice of bread, followed by a slice of cheddar cheese. Add more chicken filling on top, then a slice of provolone cheese, and finally another slice of bread.
- In a pan add some butter, Toast the sandwich on medium low heat for 3-4 min on both sides until crispy and golden , serve with fries and enjoy.
Tip: Leftovers keep 3 days in the fridge and reheat best in a skillet, not the microwave.
