Ingredients
- 1 lb both chicken breast , cut into strips
- 2 cups mix bell pepper, sliced
- 1 red onion, sliced
- 1 jalapeño,optional
- 1 tbsp lime juice
- 2 tbsp oil
- 1 cup shredded Mexican cheese
- 1 tbsp cilantro, chopped
- For the fajitas seasoning — 1 tbsp garlic powder
- For the fajitas seasoning — 1 tsp onion powder
- For the fajitas seasoning — 1 tsp cumin powder
- For the fajitas seasoning — 1 tsp coriander powder
- For the fajitas seasoning — 1 tbsp smoked paprika powder
- For the fajitas seasoning — Salt to taste
- For the fajitas seasoning — 1 tsp black pepper powder
- For the fajitas seasoning — 1 tsp red chili powder
- For the fajitas seasoning — 1/2 tsp sugar
- For the creamy fajita sauce — 1/2 cup mayonnaise

Instructions
- Preheat your oven to 425°F (220°C).
- In a baking tray add onions, bell peppers, chicken.
- Avoid overcrowding so everything roasts instead of steaming.
- Sprinkle 1 1/2 tbsp fajita seasoning mix evenly onto the chicken and vegetables.
- Mix it really well until nicely coated. Drizzle oil and bake for 20 min.
- Sprinkle shredded cheese evenly over the top. Return to the oven for 5 more minutes, until melted. Optional: Broil for 2–3 minutes for a lightly golden, bubbly top.
- In a bowl, whisk together mayonnaise, sour cream, buttermilk, fajita seasoning, lime juice, salt, and garlic powder. Taste and adjust the lime or salt if necessary.
- Remove the tray from the oven and sprinkle it with fresh cilantro. Drizzle with creamy fajita sauce or serve it on the side.
- Serve with warm tortillas (for fajitas) or rice (for fajita bowls). Alternatively, enjoy it as-is for a low-carb option.
Tip: Taste the sauce before assembling and adjust the salt then, not after.
